Bone Broth
Mood: Nourish me
Recipe: Best damn bone broth you ever had (words from a TMP fan)
Leave nothing to waste! Chicken bones are gold in our home and used in multiple ways.
Teething baby? Have them chew on a bone. In the mood for something comforting and nourishing?
Get your bones in a pot with loads of veggies, herbs and aromatics and make a yumtastic broth. Tis the season for collagen & all things immune support in one large pot!
Bone Broth Recipe:
Whole Organic Chicken-season generously with kosher salt, pepper and a couple teaspoons of turmeric
2-3 shallots or 1 white or yellow onion, halved
5-6 garlic cloves
1 leek cut in big chunks
3-inch knob of fresh ginger, unpeeled, halved
2-inch turmeric root, unpeeled
Cinnamon stick
Handful of parsley with stems
1 tablespoon fish sauce
1 tablespoon apple cider vinegar
1 tablespoon red miso paste
Place chicken, onions, garlic, ginger, and leek on large roasting pan and broil on high for 5-10 minutes or until golden brown. Browning your ingredients add depths and rich flavor to the bone broth.
Combine everything in a pressure cooker and add enough water to cover all ingredients. Cook on high pressure for 30 minutes. After 30minutes, the chicken should fall off the bone and easy to separate and set aside. I put the bones back in the broth and cook for another 90 minutes to two hours on high pressure.
To make this broth in a slow cooker, set on low heat and cook for 8-10 hours. The longer the better. Low and slow baby.
